Blackberry and Ginger Ice Cream

Servings: 2


  • 2 frozen bananas
  • 1 cup frozen blackberries
  • 1/2 inch fresh ginger
  • 1/4 cup cashews
  • 2 tsp lemon juice
  • 3 tbsp almond milk


Place all ingredients in Vitamix or any other high speed blender and mix well.  Start by pulsing and then blend it all up until you reach a thick, smooth consistency.  Pour into a large airtight freezer-proof container and freeze.

Before serving, thaw for about 10 minutes.


This ice cream is Über delicious, which may be surprising as it is completely dairy free.  Adding ginger makes this ice cream a super nutritious dessert as ginger, among its many benefits, is also known for preventing and treating cold and flu and is also anti-inflamatory.  Not to mention that the hint of ginger pairs beautifully with the blackberries.  I served mine with fresh blackberries for extra crunch.  YUM!
